The Story
Where it comes from
The original Alfredo, born in Rome in 1908 at Alfredo di Lelio's trattoria, was nothing more than fettuccine, butter and Parmigiano Reggiano emulsified tableside until glossy. America fell in love, added cream and chicken, and built a comfort classic of its own. This version honours both: a proper butter-and-cheese emulsion loosened with just enough cream to hold, and chicken seared hard so it brings colour and savour rather than blandness. The secret is temperature — the cheese must never boil, or the sauce will break into oil and grit.

butterflied to even thickness

The Method

Season and rest the chicken
10 minButterfly the breasts so they are an even 1.5 cm thick. Season generously with salt and pepper on both sides and let them sit at room temperature while the water heats.
Chef's note · Even thickness is the whole game — thin edges overcook while the centre is still raw.

Sear the chicken
10 minHeat the olive oil in a heavy skillet over medium-high. Sear the chicken 4–5 minutes per side until deeply golden and 74°C at the centre. Move to a board and rest.

Boil the pasta
8 minBring 4 L of water to a rolling boil, salt it like the sea, and cook the fettuccine 1 minute shy of al dente. Reserve 300 ml of pasta water before draining.

Build the emulsion
4 minLower the skillet to medium-low. Add the crushed garlic and cream, warm for a minute, then discard the garlic. Kill the heat and whisk in the cold butter a few cubes at a time until glossy.
Chef's note · Cold butter added off heat is what makes the sauce cling instead of split.

Marry pasta and sauce
3 minAdd the drained fettuccine and a splash of pasta water. Toss vigorously, then rain in the Parmigiano in three additions, tossing between each, until the sauce coats every ribbon.

Slice and serve
2 minSlice the rested chicken against the grain and fold it through or fan it over the top. Finish with parsley, a heavy crack of black pepper, and more cheese at the table.
Chef tips
- ·Grate the Parmigiano on a Microplane — coarse shreds melt unevenly and clump.
- ·Never let the sauce simmer once the cheese is in; residual heat is enough.
- ·Rest the chicken at least 5 minutes so the juices stay in the meat, not on the board.
Common mistakes
- ·Boiling the cream and cheese together — it breaks into an oily, grainy mess.
- ·Draining the pasta bone-dry; that starchy water is your emulsifier.
- ·Using pre-grated cheese with anti-caking agents — it will never melt smoothly.
